Preparation and characterization of colloidal particles synergistic with emulsifier stabilizing Pickering emulsion

Abstract

Natural polymer has been widely researched, In this paper, we have synthesized Zein/Chitosan colloidal particles (ZP/CH), the wetting ability of ZP/CH colloidal particles is suitable synergistic with emulsifier to produce stable Pickering emulsions. In this work, drug loaded capacity, photoatablity, encapsulation efficiency, storage stability, morphology observation, fourier transform infrared photoacoustic spectroscopy (FTIR) analysis, 1,1-diphenyl-2-pierylhydrazy (DPPH) radical scavenging activity, in vitro release, in vitro simulative digestive study, everted gut sac were extensively investigated. As a result, Pickering emulsion shows an promising outlook for its application of the light sensitive, low bioavailibility added-Value food components.
