This paper reviews a series of the works on the W/O/W emulsions so as to obtain further insights into the factors affecting the formation and stability of W/O/W type dispersion, which can be characterized by the vesicular structure of the dispersed globules consisting of the aqueous compartments separated from the aqueous suspending fluid by the layer of oil phase components. The contents are divided into four sections: methods and conditions for preparing W/O/W emulsions, thinning behavior of oil layers on the surface of the aqueous compartments, water permeability of the thin oil layer, and viscometric method for measuring the stability of W/O/W emulsions.
